Recipe Monday: Salsa
If it's one thing we've come to love, it's salsa. Always hit at parties, small get togethers, and dinner on taco night. Now that I've learned to make my own salsa, it comes in great to have handy for rainy day chips and salsa.
[Actually chips and salsa are good any day]
You'll find the recipe below.
Roteli canned tomatoes go into the food processor first.
Followed by the onion and cilantro.
Salt, pepper, cumin, sugar, and lemon juice join the party next.
Give it a whirl in the food processor.
And voila! Homemade salsa ready for the enjoying.
Ingredients:
1 can Roteli Tomatoes (I like mine with green chiles)
1 bunch of Cilantro
1/4 Onion
1 Garlic Clove
Juice of a whole lemon
1/4 tsp. cumin
1/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. pepper
What you'll need:
Food Processor
Chips (yum!)
CAUTION: this recipe is HOT!

Guac
What You'll Need:
For 2-4 Servings
3 Haas Avocados
2 Lemons
1 Garlic Clove
Handful of Cilantro -- to taste
Quixote Cheese -- for garnish
tomatoes, onions, and peppers as desired (I opted out)
Avocados should be cut open with the pits removed.
Cilantro should be minced & used as desired
I zest the garlic. If the clove is large I only use half.
Quixote Cheese for garnish

Peppers of your choosing
Directions:
1. Halve all avocados and remove pits
2. Zest and juice the two lemons
3. Zest the garlic clove
4. Mince Cilantro and add to taste
5. Combine all ingredients until thoroughly mixed
6. Add the Quixote Cheese as garnish
For me Sunday's are a day for good eats with good company. It's quickly becoming tradition in the Roque house that Sunday's are for Guacamole. This recipe is rapidly becoming a fan favorite. Easy and versatile, the recipe can be prepared in as little as 5 - 10 minutes, and can include any of your favorites (from tomatoes, to onion, and peppers).
Served with warm tortilla chips.
